Hutspot Stamppot with a Twist

One of those dishes that you love to come home to after a cold day

Now that winter is upon us, we are all craving those dishes that warm us up inside. This typical dutch Stamppot is one of those classic dishes that you love to come home to after a cold day. If this is your first stamppot, we have lots more in store for you! The classic Dutch combo of mashed potatoes and vegetables never disappoints.


Tips and Tricks

For this recipe it is important that you get a good ratio of potatoes, carrots and onions. Be sure to have equal weight of carrots and potatoes and around half the weight of any of those in onions. Naturally, all those potatoes and carrots need to be peeled. so maybe the chef that's on cleanup duty might be the lucky one today...


This recipe is not just heavy on the peeling but also heavy on slicing and dicing. The potatoes need to quartered, the onions sliced and the carrots are best cut into one centimer thick half moons. Where this might be the dream task for one, someone else might flinch from the thought of cutting all these vegetables (or the onions).



In order to make the potatoes and carrots soft enough to mash, they need to be boiled for at least 20-30 minutes. A stamppot is not complete without bacon. Treat yourself and go for the right quality and go through the effort of cutting nice thick slices from a block yourself.


Stamppot is traditionally just boiled vegetables, a real simple farmers dish. However, here at twotocook we bring you a twist on a classic. In a separate frying pan, cook the bacon and onions together. The onions take on the flavour rendered from the bacon and become even more delicious! Once the boiled veggies have cooked, drain them, mash them, and stir in the onion bacon mixture.


Stamppot is simple (basically elevated mashed potatoes). But it also comes with lots of sauces to add! If you want to go traditional, pair it with apple sauce. The freshness of the apple sauce perfectly balances the warming flavours of the stamppot. For a little extra bite you could add a grainy mustard and some herbal salt (we used sea salt from the Dutch Waddensea, which has a local selection of herbs added to the salt). Last but not least, stamppot is best served with a thin slice of butter on top. Enjoy, together!

Do as the Dutch do and serve this dish with the phrase, "Eet Smakelijk!" It means bon appetit!

How this works?

For those of you that are new to the twotocook family, our recipe structure deserves a little explanation. (For those of you who know the drill, skip on ahead :) The idea behind twotocook was to design recipes for a fun game-like experience. The idea is you and your partner decide who will be chef 1 and who will be chef 2. Following your selection you will be brought to your individual instructions. We will start with a split grocery list for those that maybe want to split the shopping and come together for the meal. Then you will find the recipe steps are written per person rather than chronologically. For example, one person can chop vegetables while the other is sautéing onion. The idea is for the recipes to be structured so working together in the kitchen is a seamless experience (and fun too!). We have game-ified cooking from start to finish (including clean up duty!).
